Pancake Day is a definite highlight when it comes February! This Malteser pancake recipe is extremely easy and makes roughly 15-18 scotch style pancakes. It’s a huge hit with the kids and makes for a nutritious breakfast or snack. If you make these ahead, you can pop the pancakes into the toaster to warm them through for a super quick breakfast or snack.
You will need:
180g whole rolled oats
350ml milk of choice (I like almond milk with these but any milk will do!)
20g coconut sugar
1tsp baking powder
2 whole eggs
2 scoops Malteser protein powder
40g Maltesers
Simply put all the ingredients into a Nutribullet or blender and whizz for 30 secs until you have a smooth batter. On a medium to low heat, use a tablespoon to carefully put a spoonful of batter into the pan (you can oil the pan lightly if preferred). Cook the pancake for 2 minutes before flipping it. Cook for a further minute once flipped. Continue until you have used up all the batter.
Then you are ready to pile them high and cover them with whatever you like! I really like a large dollop of yoghurt, some mixed berries and a drizzle of maple syrup on mine. You could always add a few Maltesers on top too! Enjoy!
